Def: an activity best done in warm, dry climates in places where there are endless interesting roads with little traffic and respectful, supportive drivers. Great wine and fresh produce should be available in abundance, and passers-by should yell "bon appetite" when they see you sitting by the roadside eating a baguette and cheese.
Key structures should be at least 500 years old and ideally still in daily use.
